I'm a foodie! Summer spring rolls

I don't think i really posted about food before. It's not that i don't like food, i do! A lot! And i love to cook too.
I appreciate those who can take pictures of food and accomplish to make the food look good in the photo. What is it that it often looks worse on screen than in real life?

Anyway, since summers in NY are so hot i don't like to stand at the stove too long, i like to make salads and wraps (oh you should taste my chicken fajitas!) but last night i kept dreaming about summer spring rolls. Really. In my sleep i actually spent 7 hours thinking about summer spring rolls. I dreamt about eating them, about making them, all these different variations, i dreamt about sharing them with friends, and more eating them. They were all over my dreams.

So early this morning i went into the kitchen and started preparing.
I must admit, i had never made them myself before. (but i ate many so i kinda figured out how to make them)Rolling them must be done tight and careful. You don't want to tear the rice paper. There were a few that didn't come out right, but that's no problem, i just ate them while rolling the next! ;)

They are also perfect to put in a box and give to your husband for lunch! Isn't he lucky?
